Ingredients
- Cucumber: 1 large, chopped
- Tomatoes: 3 medium, chopped
- Red Onion: 1/2, thinly sliced
- Kalamata Olives: 1/2 cup
- Feta Cheese: 1 cup, crumbled
- Bell Pepper (Green): 1, chopped

- Olive Oil: 1/4 cup
- Red Wine Vinegar: 2 tbsp
- Dried Oregano: 1 tsp
- Salt: to taste
- Black Pepper: to taste
Preparation Steps
- In a large bowl, combine chopped cucumber, tomatoes, red onion, olives, and bell pepper.
- Gently stir in the crumbled feta cheese.
- In a small bowl, whisk together olive oil, red wine vinegar, and oregano.
- Pour dressing over the salad and toss gently.
- Season with salt and pepper to taste before serving.
Notes
For a vegan version, omit feta or use a vegan feta alternative.
