Ingredients

  • Cucumber: 1 large, chopped
  • Tomatoes: 3 medium, chopped
  • Red Onion: 1/2, thinly sliced
  • Kalamata Olives: 1/2 cup
  • Feta Cheese: 1 cup, crumbled
  • Bell Pepper (Green): 1, chopped

Dressing

  • Olive Oil: 1/4 cup
  • Red Wine Vinegar: 2 tbsp
  • Dried Oregano: 1 tsp
  • Salt: to taste
  • Black Pepper: to taste

Preparation Steps

  1. In a large bowl, combine chopped cucumber, tomatoes, red onion, olives, and bell pepper.
  2. Gently stir in the crumbled feta cheese.
  3. In a small bowl, whisk together olive oil, red wine vinegar, and oregano.
  4. Pour dressing over the salad and toss gently.
  5. Season with salt and pepper to taste before serving.

Notes

For a vegan version, omit feta or use a vegan feta alternative.
