- Baby Spinach: 5 oz
- Fresh Strawberries: 1 cup, sliced
- Walnuts: 1/3 cup, toasted and roughly chopped
- Red Onion: 1/4, thinly sliced (optional)

- Balsamic Vinegar: 3 tbsp
- Olive Oil: 2 tbsp
- Maple Syrup: 1 tsp
- Dijon Mustard: 1/2 tsp
- Salt: to taste
- Black Pepper: to taste
Preparation Steps
- In a large salad bowl, combine baby spinach, sliced strawberries, and toasted walnuts.
- If using, add thinly sliced red onion.
- In a small bowl or jar, whisk together balsamic vinegar, olive oil, maple syrup, and Dijon mustard.
- Season the dressing with salt and pepper.
- Pour dressing over the salad just before serving and toss gently.
Notes
Candied pecans can be used instead of walnuts. Add vegan feta for a richer flavor if desired.
