Ingredients

  • Baby Spinach: 5 oz
  • Fresh Strawberries: 1 cup, sliced
  • Walnuts: 1/3 cup, toasted and roughly chopped
  • Red Onion: 1/4, thinly sliced (optional)

Dressing

  • Balsamic Vinegar: 3 tbsp
  • Olive Oil: 2 tbsp
  • Maple Syrup: 1 tsp
  • Dijon Mustard: 1/2 tsp
  • Salt: to taste
  • Black Pepper: to taste

Preparation Steps

  1. In a large salad bowl, combine baby spinach, sliced strawberries, and toasted walnuts.
  2. If using, add thinly sliced red onion.
  3. In a small bowl or jar, whisk together balsamic vinegar, olive oil, maple syrup, and Dijon mustard.
  4. Season the dressing with salt and pepper.
  5. Pour dressing over the salad just before serving and toss gently.

Notes

Candied pecans can be used instead of walnuts. Add vegan feta for a richer flavor if desired.
