
Watermelon, Feta & Mint Salad

Ingredients
- Watermelon: 4 cups, seedless and cubed
- Feta Cheese: 1 cup, crumbled
- Fresh Mint: 1/2 cup, roughly chopped
- Red Onion: 1/4, very thinly sliced (optional)
↳ Dressing
- Lime Juice: 2 tbsp
- Olive Oil: 1 tbsp
- Black Pepper: to taste
Preparation Steps
- In a large serving bowl, gently combine cubed watermelon, crumbled feta, and chopped mint.
- If using, add thinly sliced red onion.
- In a small bowl, whisk together lime juice and olive oil.
- Drizzle the dressing over the salad.
- Season with black pepper to taste.
- Toss very gently and serve immediately for best texture.
Notes
For a vegan version, use a vegan feta alternative. A drizzle of balsamic glaze can also be nice.
