A refreshing summer salad with sweet watermelon, salty feta, and fresh mint.

Ingredients

  • Watermelon: 4 cups, seedless and cubed
  • Feta Cheese: 1 cup, crumbled
  • Fresh Mint: 1/2 cup, roughly chopped
  • Red Onion: 1/4, very thinly sliced (optional)

Dressing

  • Lime Juice: 2 tbsp
  • Olive Oil: 1 tbsp
  • Black Pepper: to taste

Preparation Steps

  1. In a large serving bowl, gently combine cubed watermelon, crumbled feta, and chopped mint.
  2. If using, add thinly sliced red onion.
  3. In a small bowl, whisk together lime juice and olive oil.
  4. Drizzle the dressing over the salad.
  5. Season with black pepper to taste.
  6. Toss very gently and serve immediately for best texture.

Notes

For a vegan version, use a vegan feta alternative. A drizzle of balsamic glaze can also be nice.
