Ingredients

  • Mixed Greens: 5 oz (or Arugula)
  • Apple: 1 large, cored and thinly sliced (e.g., Fuji, Gala)
  • Walnuts: 1/2 cup, toasted and chopped
  • Blue Cheese: 1/2 cup, crumbled
  • Red Onion: 1/4, thinly sliced (optional)
  • Dried Cranberries: 1/4 cup (optional)

Dressing

  • Olive Oil: 1/4 cup
  • Apple Cider Vinegar: 2 tbsp
  • Dijon Mustard: 1 tsp
  • Maple Syrup: 1 tsp (or honey)
  • Salt: to taste
  • Black Pepper: to taste

Preparation Steps

  1. In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, and maple syrup for the dressing. Season with salt and pepper.
  2. In a large salad bowl, combine mixed greens (or arugula), sliced apple, and toasted walnuts.
  3. Add crumbled blue cheese. If using, add thinly sliced red onion and dried cranberries.
  4. Drizzle the cider vinaigrette over the salad and toss gently to coat.
  5. Serve immediately.

Notes

For a vegan version, omit blue cheese (or use a vegan alternative) and ensure maple syrup is used in the dressing. Pecans can be used instead of walnuts.
