
Mediterranean Tuna Salad (No Mayo)

Ingredients
- Canned Tuna: 2 cans (5 oz each), drained (in water or oil)
- Cucumber: 1 medium, diced
- Cherry Tomatoes: 1 cup, halved
- Red Onion: 1/4, finely chopped
- Kalamata Olives: 1/4 cup, pitted and halved
- Red Bell Pepper: 1/2, diced
- Fresh Parsley: 1/2 cup, chopped

- Extra Virgin Olive Oil: 3 tbsp
- Lemon Juice: 2 tbsp, fresh
- Dried Oregano: 1/2 tsp
- Salt: to taste
- Black Pepper: to taste
Preparation Steps
- In a medium bowl, flake the drained tuna with a fork.
- Add diced cucumber, halved cherry tomatoes, finely chopped red onion, Kalamata olives, diced red bell pepper, and chopped fresh parsley to the tuna.
- In a small bowl, whisk together olive oil, lemon juice, and dried oregano for the dressing.
- Pour the dressing over the tuna and vegetable mixture.
- Season with salt and pepper to taste. Toss gently to combine all ingredients.
- Serve immediately, or chill for 30 minutes to allow flavors to meld. Can be served on lettuce leaves, with crackers, or in a pita.
Notes
Chickpeas or capers can also be added for extra texture and flavor. This recipe uses pre-cooked canned tuna.
