Ingredients

  • Canned Tuna: 2 cans (5 oz each), drained (in water or oil)
  • Cucumber: 1 medium, diced
  • Cherry Tomatoes: 1 cup, halved
  • Red Onion: 1/4, finely chopped
  • Kalamata Olives: 1/4 cup, pitted and halved
  • Red Bell Pepper: 1/2, diced
  • Fresh Parsley: 1/2 cup, chopped

Dressing

  • Extra Virgin Olive Oil: 3 tbsp
  • Lemon Juice: 2 tbsp, fresh
  • Dried Oregano: 1/2 tsp
  • Salt: to taste
  • Black Pepper: to taste

Preparation Steps

  1. In a medium bowl, flake the drained tuna with a fork.
  2. Add diced cucumber, halved cherry tomatoes, finely chopped red onion, Kalamata olives, diced red bell pepper, and chopped fresh parsley to the tuna.
  3. In a small bowl, whisk together olive oil, lemon juice, and dried oregano for the dressing.
  4. Pour the dressing over the tuna and vegetable mixture.
  5. Season with salt and pepper to taste. Toss gently to combine all ingredients.
  6. Serve immediately, or chill for 30 minutes to allow flavors to meld. Can be served on lettuce leaves, with crackers, or in a pita.

Notes

Chickpeas or capers can also be added for extra texture and flavor. This recipe uses pre-cooked canned tuna.
