Ingredients

  • Arugula: 5 oz
  • Pear: 1-2 ripe, thinly sliced (e.g., Bartlett, Anjou)
  • Prosciutto: 3 oz, thinly sliced, torn into pieces
  • Parmesan Cheese: 1/4 cup, shaved
  • Walnuts: 1/4 cup, toasted and chopped (optional)

Dressing

  • Olive Oil: 3 tbsp
  • Lemon Juice: 1 tbsp, fresh
  • Dijon Mustard: 1/2 tsp
  • Salt: to taste
  • Black Pepper: to taste

Preparation Steps

  1. In a small bowl, whisk together olive oil, lemon juice, and Dijon mustard for the dressing. Season with salt and pepper.
  2. In a large salad bowl, place the arugula.
  3. Arrange sliced pear and torn prosciutto over the arugula.
  4. Sprinkle with shaved Parmesan cheese and toasted walnuts (if using).
  5. Drizzle with lemon vinaigrette just before serving and toss lightly or serve undressed with dressing on the side.

Notes

A drizzle of honey or balsamic glaze can also be nice.
