Ingredients
- Arugula: 5 oz
- Pear: 1-2 ripe, thinly sliced (e.g., Bartlett, Anjou)
- Prosciutto: 3 oz, thinly sliced, torn into pieces
- Parmesan Cheese: 1/4 cup, shaved
- Walnuts: 1/4 cup, toasted and chopped (optional)

- Olive Oil: 3 tbsp
- Lemon Juice: 1 tbsp, fresh
- Dijon Mustard: 1/2 tsp
- Salt: to taste
- Black Pepper: to taste
Preparation Steps
- In a small bowl, whisk together olive oil, lemon juice, and Dijon mustard for the dressing. Season with salt and pepper.
- In a large salad bowl, place the arugula.
- Arrange sliced pear and torn prosciutto over the arugula.
- Sprinkle with shaved Parmesan cheese and toasted walnuts (if using).
- Drizzle with lemon vinaigrette just before serving and toss lightly or serve undressed with dressing on the side.
Notes
