Ingredients
- Cooked Quinoa: 2 cups
- Black Beans: 1 can (15 oz), rinsed and drained
- Corn Kernels: 1 cup, fresh or frozen (thawed)
- Red Bell Pepper: 1, diced
- Cilantro: 1/2 cup, chopped
- Pumpkin Seeds: 1/4 cup

- Lime Juice: 1/4 cup
- Olive Oil: 3 tbsp
- Cumin Powder: 1 tsp
- Chilli Powder: 1/2 tsp (optional)
- Salt: to taste
- Black Pepper: to taste
Preparation Steps
- In a large bowl, combine cooked quinoa, black beans, corn, diced red bell pepper, and chopped cilantro.
- In a separate small bowl, whisk together lime juice, olive oil, cumin, and chili powder (if using).
- Pour the dressing over the quinoa mixture and toss to combine.
- Stir in pumpkin seeds.
- Season with salt and pepper to taste. Serve chilled or at room temperature.
