Ingredients

  • Cooked Quinoa: 2 cups
  • Black Beans: 1 can (15 oz), rinsed and drained
  • Corn Kernels: 1 cup, fresh or frozen (thawed)
  • Red Bell Pepper: 1, diced
  • Cilantro: 1/2 cup, chopped
  • Pumpkin Seeds: 1/4 cup

Dressing

  • Lime Juice: 1/4 cup
  • Olive Oil: 3 tbsp
  • Cumin Powder: 1 tsp
  • Chilli Powder: 1/2 tsp (optional)
  • Salt: to taste
  • Black Pepper: to taste

Preparation Steps

  1. In a large bowl, combine cooked quinoa, black beans, corn, diced red bell pepper, and chopped cilantro.
  2. In a separate small bowl, whisk together lime juice, olive oil, cumin, and chili powder (if using).
  3. Pour the dressing over the quinoa mixture and toss to combine.
  4. Stir in pumpkin seeds.
  5. Season with salt and pepper to taste. Serve chilled or at room temperature.
