  • Chickpeas: 1 can (15 oz), rinsed and drained
  • Cucumber: 1 medium, diced
  • Cherry Tomatoes: 1 cup, halved
  • Red Onion: 1/4 cup, finely chopped
  • Kalamata Olives: 1/4 cup, pitted and halved
  • Fresh Parsley: 1/2 cup, chopped
  • Fresh Mint: 1/4 cup, chopped (optional)

Dressing

  • Extra Virgin Olive Oil: 1/4 cup
  • Lemon Juice: 3 tbsp, fresh
  • Garlic: 1 clove, minced
  • Dried Oregano: 1 tsp
  • Salt: 1/2 tsp
  • Black Pepper: 1/4 tsp

Preparation Steps

  1. In a large salad bowl, combine chickpeas, diced cucumber, halved cherry tomatoes, chopped red onion, and Kalamata olives.
  2. Add fresh parsley and mint (if using).
  3. In a small bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
  4. Pour the dressing over the salad ingredients.
  5. Toss gently to ensure everything is well coated.
  6. Taste and adjust seasoning if necessary. For best flavor, let it sit for 15-30 minutes before serving.
