Preparation Steps
- In a large salad bowl, combine chickpeas, diced cucumber, halved cherry tomatoes, chopped red onion, and Kalamata olives.
- Add fresh parsley and mint (if using).
- In a small bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
