Ingredients

  • Cucumber: 2 medium, thinly sliced
  • Fresh Mint: 1/4 cup, chopped
  • Red Onion: 1/4, very thinly sliced (optional)

Dressing

  • Lemon Juice: 2 tbsp
  • Olive Oil: 1 tbsp
  • Salt: to taste
  • Black Pepper: to taste

Preparation Steps

  1. In a bowl, combine sliced cucumber and chopped fresh mint.
  2. If using, add thinly sliced red onion.
  3. In a separate small bowl, whisk together lemon juice and olive oil.
  4. Pour the dressing over the cucumber and mint.
  5. Season with salt and pepper, and toss gently to combine.
  6. Chill for at least 15 minutes before serving for best flavor.

Notes

Add a pinch of sugar or maple syrup to the dressing if you prefer a touch of sweetness.
