- Cucumber: 2 medium, thinly sliced
- Fresh Mint: 1/4 cup, chopped
- Red Onion: 1/4, very thinly sliced (optional)

- Lemon Juice: 2 tbsp
- Olive Oil: 1 tbsp
- Salt: to taste
- Black Pepper: to taste
Preparation Steps
- In a bowl, combine sliced cucumber and chopped fresh mint.
- If using, add thinly sliced red onion.
- In a separate small bowl, whisk together lemon juice and olive oil.
- Pour the dressing over the cucumber and mint.
- Season with salt and pepper, and toss gently to combine.
- Chill for at least 15 minutes before serving for best flavor.
Notes
Add a pinch of sugar or maple syrup to the dressing if you prefer a touch of sweetness.
